Chicken Okra
A variation of the previous recipe. |

Directions:
- ** If using frozen okra (which is just fine) thaw first.
- Put oil in hot casserole pan.
- Salt & pepper the chicken parts and place them in pot.
- Place cover on pot and be careful of platter.
- Lightly brown them for 5-8 minutes.
- Add chopped onion and garlic.
- Stir and cook for 5 minutes.
- Add okra, can of plum tomatoes, red wine, more salt & pepper and parsley.
- Stir gently.
- Cover and simmer for 1 hour.
- Check the chicken for doneness.
- Serve with hot white rice.
